I am a lover of all pastas! Here is a fairly quick and easy dish that you can change up with different vegetables, pastas and add chicken if you wanted! It's very yummy and with all of the vegetables, healthy too!
It feeds about 4-8 people (depending on how many helpings/portion size).
Combine box of angel hair noodles (or fettuccine or spaghetti-depending on what you have) and 2 cans of sodium free chicken broth (you can use regular chicken broth) and add a cup of water in pot with a dash of salt and pepper, boil as directed on noodles package (usually around 8 minutes-Al dente).
In a large sauce pan combine:
- Two Tablespoons of Olive Oil
- 1 cup of spinach leaves
- 3/4 cup of mushrooms (canned, if fresh 1 cup).
- 1/2 cup of grape tomatoes (halved)
- 1/2 tsp of minced garlic
- 1/4 cup of chopped onion
- 1/4 cup of sodium free chicken broth
- Sea Salt (or salt) and Ground Pepper to taste
If you don't have spinach - use fresh broccoli or fresh asparagus (my fave) - still yummy:) And you could also add a cup of
cooked chopped chicken to the sauteed vegetables.
Saute all ingredients for 15 minutes, stirring frequently. Pasta should be drained and cooling now.
Pour Pasta in sauteed vegetables and pull through/mix lightly.
Grate Fresh Parmesan Cheese over and VOILA!
Serve with garlic bread.
